Bánh xèo is a crispy fried filled yellow pancake.It is also sometimes called Vietnamese crepe.


The batter becomes crispy because they use rice flour. This sizzles a bit when baking, which is why it is also nicknamed the sizzling pancake. For the yellow color they use tumeric powder, which is very characteristic of the dish. The filling usually consists of bacon, shrimp, bean sprouts and spring onion. It is served together with lettuce, Thai basil, coriander, mint and nuoc mam. It is similar to the Thai version kanom bueang yuan (ขนมเบื้องญวณ). The Thai variant has a slightly saltier taste.
