China has several varieties of siu mai, the ones we often get served in restaurants are the Cantonese style. In China they also call it the pork and mushroom dumpling.


Siu mai is mainly made with finely chopped pork and shrimp, Chinese mushrooms and possibly water chestnut or bamboo. The yellow sheet they use to put the siu mai filling in is a very thin dough made from lye water dough. The siu mai is easy to prepare by steaming or baking. It can be combined with other dim sum and Asian Tapas.
