Sauce | Miso paste


Miso paste is used in Japan as a seasoning for its umami taste. It's a fermented paste made from soybeans, rice with salt and koji.


Miso can be either red or white, both are salty but the red miso is more intense in flavor.As a result, the light miso is used more in dressings and even desserts because of its milder taste.


Red miso is also called aka miso and white miso is also called shiro miso. If you had to use this in hot dishes, don't let it heat up too long otherwise the taste will disappear.
