Massaman curry has more spice than the other Thai curries. This is because this dish has a lot of Indian influences.


It is therefore the only Thai curry in which white cardamom, nutmeg, star anise, cinnamon and cloves are used.The massaman curry is also the only stew curry. It can be sharp to mild, sweet and slightly sour from tamarind. It is mainly made with beef or chicken, but is also delicious with lamb. Like the yellow curry, it has onion and potato in it, but garnished with peanut or cashew nuts.
