Gỏi ngó sen is a Vietnamese salad made from young lotus stems.
It is often made with shrimp and pork and with lots of fresh herbs, finished with fried shallots and finely chopped peanuts. Here the young lotus stems can only be found in a glass jar in brine. Though they can be used perfectly for this dish. They taste quite neutral, the dressing that accompanies this salad has a light sweet and sour taste. This fresh salad is delicious in the summer and easy to prepare.
