Sauce | Soybean sauce
Soybean sauce is made by fermenting yellow soybeans. The cooked soybeans are mixed with water,salt and a little wheat flour. Then it is fermented in jars.
It is used throughout East and Southeast Asia in various dishes, soups, stir-fries and steam dishes. The bean sauce has a salty umami taste. In cookbooks you may come across the sauce under a different name, such as taojo or fermented bean sauce. Soybean sauce is often used in stir-fried dishes as a seasoning. The most famous dish is stir-fried water spinach (morning glory) with bean sauce.
