Sesame oil is like the olive oil of Asia. Sesame oil is pressed from sesame seeds and there are 2 types: cold pressed and roasted.

The cold-pressed sesame oil is very light yellow in color. It is used for baking and frying. The toasted sesame oil is dark and brown in color;the smell and taste of this is more intense. The roasted sesame oil is often used in marinades, sauces and as topping in hot dishes. When heated, it would burn out quickly and the taste would also diminish.
